Adelaide misses Cheong Liew, who’s been executive chef at The Botanical, in Melbourne, for over a year. Grrrrrr. Jean Duruz, Senior Lecturer in cultural studies in the School of Communication, International Studies and Languages at the University of South Australia, presented an amazing paper on Cheong’s gastronomic intelligence at Sophia University Institute of Comparative Culture in Tokyo, Japan. It was the Feb. 21-22, 2009 symposium, “Globalization, Food, and Social Identities in the Pacific Region,” and DRINKSTER has only just found it. Duh! Thanks Jean for your permission.
